1 ½ tbsp canola oil

1 big chopped onion

1 tbsp grated fresh ginger

2 chopped garlic gloves

3 cups purred pumpkin

2-4 cups chicken stock

2 finely sliced Granny Smith apples

Heat the oil in a saucepan, sauté the onion till translucent, add the ginger and garlic, stir for a minute till the fragrance develops. Add the pumpkin and stock, heat through. Add the apples, cook till apples are tender. Add salt/pepper to taste.
